I like to make a big batch in the crockpot every Sunday or every other Sunday and then eat it for lunch all week long! I love that it’s cozy, fills me up and somehow I never really get tired of it. So many good occasions for making it, busy weeks, football Sunday’s, or when you just need something comforting to eat that can simmer away in the kitchen while you’re doing ANYTHING else!

Ingredients

You can easily customize this based on what you have in your pantry or fridge, this is a super forgiving recipe but here is what I use!

Here’s what you’ll need:

  • 1 lb cooked ground turkey, beef, or veggie crumbles (all three work great and I will use whatever I have on hand)

  • ½ of a diced white onion

  • Diced mushrooms (add as much or as little as you like)

  • 1 can (29 oz) tomato sauce

  • 1 can (15.25 oz) black beans, drained

  • 1 can (15.25 oz) kidney beans, drained

  • 1 can drained corn

  • 1 can (16 oz) chili beans

  • 1 can (10 oz) mild Rotel

  • Seasonings to taste: garlic salt, onion powder, salt, pepper, paprika, cayenne pepper!

  • Shredded cheddar cheese

  • Sour cream

  • Fritos for dipping!

Instructions

  1. Cook the meat:
    In a skillet, brown your ground meat (or veggie crumbles) with a little salt, pepper, and minced garlic for flavor.

  2. Add the veggies:
    Once the meat starts to brown, toss in your diced onion and mushrooms. Let everything cook down until tender and fragrant.

  3. Prep your beans and corn:
    While the meat mixture finishes up, drain and rinse your kidney beans, black beans, and corn.

  4. Combine in the crockpot:
    Add the cooked meat and veggies, tomato sauce, beans, corn, chili beans (not drained), Rotel, and your other seasonings to the crockpot.

  5. Let it cook:

    • Cook on low for 8 hours, or

    • high for 4 hours if you’re short on time.

  6. Serve it up:
    Top with shredded cheddar cheese and a handful of Fritos (or your favorite gluten-free chips).


Tips & Variations

  • Spice it up: If you like it on the spicer side you can add more cayenne or even like a dash of hot sauce for more of a kick.

  • Add veggies: You really can add any other veggies that you want! Bell peppers, zucchini, or sweet potatoes would make really yummy additions.

  • Freeze it: This chili freezes really well! I like to portion it out once it is cooled and then put each serving into a container to thaw for an easy lunch later on!
